                                                         What is hing?

There are species of asafoetida. Asafoetida plant is 15-2-4 meters high, fragrant and green for some years. Its stem is soft, and it has many branches. Its smell is sulfurous. Resin or gum is obtained by cutting its gum in the month of March to August, which is called asafoetida. Pure asafoetida is white, crystal shaped, also 5 m in diameter, in round or flat pieces, and its four year old plant is the best for extracting asafoetida. It is ground into powder.
